The Operational Demands of Gluten-Free Certification

Selling a product as "gluten-free" is not just a marketing claim, it is a regulatory commitment. Under FDA regulations, a product labeled gluten-free must contain less than 20 parts per million (ppm) of gluten. Maintaining this standard requires rigorous supplier management, co-packer controls, and lot-level traceability.

Supplier Certificate Management

Every ingredient in a gluten-free product must be verified as gluten-free by the supplier. This means collecting and maintaining Certificates of Analysis (CoAs) that include gluten testing results for every lot of every ingredient. If a supplier's certificate expires or a new lot is received without a CoA, you cannot legally use that ingredient in your gluten-free product.

Dedicated Facilities and Shared Lines

The most common source of gluten contamination is shared equipment. If your co-packer runs wheat-containing products on the same line as your gluten-free products, you must verify that their allergen changeover and cleaning procedures are sufficient to bring gluten levels below 20 ppm. This requires documented cleaning validation, not just a verbal assurance.

If a gluten contamination event occurs, whether from a supplier substitution or a co-packer error, you must be able to identify every finished good affected within hours.
