The Operational Reality of Granola Manufacturing

Granola seems simple, but at scale, it is a complex process manufacturing challenge. The baking process results in significant moisture loss, and the inclusion of high-value ingredients (nuts, seeds, dried fruit) means that yield variances directly impact your profitability.

Moisture Loss and True Yield

When you bake 1,000 lbs of raw granola mix, you do not get 1,000 lbs of finished granola. Moisture evaporates during baking, typically resulting in a 5% to 10% yield loss. If your BOM does not account for this "bake-off," your inventory will constantly run short and your COGS will be artificially low. Your software must calculate true yield based on finished weight.

Allergen Control and Segregation
