Condiments (ketchup, mustard, hot sauce, mayo) are heavy, low-margin products that require massive volume to achieve profitability. When you add the cost of organic ingredients to the mix, operational efficiency is the only way to survive.
Glass vs. Plastic: Freight and Breakage
Many premium organic condiments use glass packaging. Glass is heavy, increasing outbound freight costs, and fragile, increasing shrinkage (breakage) during transit and co-packing. Your COGS model must accurately account for this higher shrinkage rate and the increased landed cost of freight, otherwise your margins will look artificially healthy.
