Organic meat brands face dual regulatory oversight: the USDA National Organic Program (NOP) for their organic claims, and the USDA Food Safety and Inspection Service (FSIS) for meat processing. This creates a documentation burden that far exceeds that of ambient grocery brands.
Catch Weight and Variable Yield
Unlike a box of crackers, meat is sold by "catch weight" (variable weight). A case of organic chicken breasts might weigh 40 lbs, or it might weigh 42.5 lbs. Your inventory system must be able to track inventory by both unit count (cases) and exact weight (pounds) simultaneously, pricing sales orders based on the actual shipped weight.
Cold Chain and Expiration Tracking
Fresh organic meat has a highly perishable shelf life. Your operations platform must enforce strict FEFO (First Expired, First Out) rotation at the 3PL. If a pallet is not shipped before its minimum remaining shelf life threshold (often 14-21 days for retail acceptance), it must be automatically flagged for discount or donation before it becomes a total write-off.
